Q: Why is my Ghee sometimes  liquid, Semi liquid and solid? What's the difference?

A: Ghee contains many fatty acids with different melting points. Ghee purchased on the Internet may not have the same homogeneous and smooth texture of store-bought ghee. It is due to the melting and crystallization of fats depending on the weather conditions during transit. This does impact the texture, but there is no other effect on the taste, quality and shelf-life of the ghee.

Ghee is primarily used either as a cooking fat or as a spread on warm foods. In both of these cases, this grainy, runny or separated texture disappears in a matter of seconds. For example, someone who has never seen crystallization of honey in the winter may consider it as a product defect. Upon further investigation we will find that it is perfectly normal.

 

 

Q. why is my ghee creamy ? Does it mean it's made from cream ?

There is a misconception in public that the texture tells us whether it's cream ghee or bilona ghee, whether it's vanaspati or dalda, whether its made from A2 or A1 milk. On the contrary, the texture of the ghee can never tell about the ghee classification. The ghee granules when in transit gets broken sometimes due to weather change and transit time. There will b zero difference in taste and fragnance. Even a dalda and vanaspati can have more granules as slow cooling is is a natural way to make granules. Q. why is my ghee not melting in the jar in summers ?

The Ghee when produced, is put in low temperature for slow cooling to make granules in big pots. After the granlules are made, we pack and ship. At the time it reaches you, it might change its texture due to transit time. Ghee melting point does not depend on summer heat. U can take the ghee in ur palm and close the palm to check if its melting or not. However if u think that full jar should just melt in summers, then its not the case. The ghee once put in food or on pan will atonce melts. 

Q: I bought ghee but Why is my ghee not solid in winters?  

A. Whenever we make ghee, we leave it in 30-40 ltr pots for slow cooling. Slow cooling allows granules to come in ghee. As soon as the granules are made, we pack and sends them. The slow cooling method plays vital role in freezing the ghee. ghee Texture does not gaurantee any purity or impurity. There is a lot of difference between cooling 5 ltr ghee and 40 ltr ghee. 

 

Q: When I Bought ghee, It was liquid, but over time, it turned solid, Why?

 A: Ghee changes it state very fast overnight depending upon the room temperature. When the ghee was produced, the production  time and transit weather must be higher.  But when it sit's at your room temperature,  it will change its state as temperature  comes down.  Its perfectly normal.

 Q: Why is my ghee half liquid, half solid?

 A: Ghee contains  Granules which  are heavier than liquid Ghee. As the ghee sits and settles over time, the granules will subside at bottom. It's very natural process.

Q: My Ghee have 2 shades. Lower is light yellow and upper part is yellow. Why?

 A: Ghee contains granules. When they subside at bottom, they start solidifying over time. Solid part of ghee or semi solid part will always show light color as its the tendency that contracts color inside. Q: My Ghee is liquid and have less granules. Is it pure Ghee?

A: Granules are not the method to calculate Purity. As mentioned above, the transit time and weather plays vital role in decreasing granules. A normal Dalada ghee can also have granules. What matters is your overall body effect after eating ghee. The only method through which anyone can test purity is by performing ADULTERATION test at NABL accredited labs.

 It is perfectly normal for ghee to be liquid, solid or a combination of consistencies. All of these factors depend on the rate of cooling and the temperature outside the jar.
